Here’s a simple recipe for Chicken Parmigiana:

Ingredients:

  • 2 chicken breasts (butterflied and flattened)
  • Salt and pepper
  • 1 cup flour
  • 2 eggs (beaten)
  • 1 cup breadcrumbs
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese (shredded)
  • ½ cup parmesan cheese (grated)
  • Olive oil for frying

Instructions:

  1. Prep the chicken: Season the chicken breasts with salt and pepper. Coat each breast in flour, then dip into beaten eggs, and finally into breadcrumbs to coat evenly.
  2. Cook the chicken: Heat olive oil in a pan over medium heat and cook the chicken breasts until golden brown (about 3-4 minutes per side). Set aside.
  3. Assemble: Preheat the oven to 180°C (350°F). In a baking dish, add a layer of marinara sauce, place the fried chicken breasts on top, and then spoon more marinara sauce over the chicken.
  4. Add cheese: Sprinkle mozzarella and parmesan cheese over the chicken.
  5. Bake: Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
